2016 HeHuanShan - Lightly Roasted

Like its cousins grown at high altitudes in central Taiwan (I am thinking Lishan and Dayuling), this exquisite He Huan Shan is lightly oxidized, wonderfully aromatic and offers a variety of flavor notes that change with each infusion. More forgiving in the preparation than Lishan (which, in my opinion, takes a lot of experience to get just right), He Huan Shan is still delightfully complex and well worth exploring. Take a look at the leaves after your last infusion and appreciate the care with which this tea isharvested and processed. What a great way to spend an afternoon.
